3 simple Austrian recipes for a family vacation in an apartment

Here we present 3 traditional Austrian recipes that you can easily prepare in your apartment. Ideal for a relaxing evening after a day in the mountains or on the ski slopes!

 

Cheese spaetzle with fried onions

Ingredients for 4 people:

  • 400 g flour
  • 4 eggs
  • 150 ml water
  • Salt
  • 200 g mountain cheese (grated)
  • 100 g Emmental cheese (grated)
  • 2 onions
  • Butter for frying

Preparation:

  • Mix the flour, eggs, water and a pinch of salt to form a thick dough.
  • Scrape into boiling salted water with a spaetzle slicer. As soon as the spaetzle float to the top, skim them off.
  • Heat the butter in a large pan, add the spaetzle and mix with the cheese.
  • Cut the onions into rings and fry in butter until golden brown.
  • Garnish the spaetzle with the fried onions and serve hot.

 


 

Tyrolean Gröstl

Ingredients for 4 people:

  • 800 g waxy potatoes (pre-cooked)
  • 300 g beef or roast pork (from the day before or fresh)
  • 1 onion
  • 2 tbsp clarified butter
  • salt, pepper, caraway, marjoram
  • 4 eggs
  • Parsley to garnish

Preparation:

  • Slice the potatoes, dice the meat and finely chop the onion.
  • Heat clarified butter in a large pan, fry the onion until translucent, add the potatoes and meat and fry until crispy.
  • Season with salt, pepper, caraway and marjoram.
  • Fry fried eggs in a second pan.
  • Arrange the Gröstl on plates and serve with a fried egg and fresh parsley.

 


 

Kaiserschmarrn with roasted plums

Ingredients for 4 people:

  • 6 eggs
  • 250 ml milk
  • 150 g flour
  • 2 tbsp sugar
  • 1 sachet of vanilla sugar
  • 1 pinch of salt
  • 50 g raisins (optional)
  • butter for frying
  • Powdered sugar for sprinkling

For the plum roaster:

  • 500 g plums (pitted)
  • 3 tbsp sugar
  • 1 cinnamon stick
  • 100 ml water

Preparation:

  • Separate the eggs. Mix the egg yolks with the milk, flour, sugar, vanilla sugar and salt until smooth. Beat the egg whites until stiff and fold in.
  • Heat the butter in a large pan, pour in the batter, sprinkle with optional raisins and fry over a medium heat until golden brown.
  • Turn, cut into large pieces and fry again briefly.
  • Simmer the plums with sugar, cinnamon stick and water in a pan for about 15 minutes until soft.
  • Sprinkle the Kaiserschmarrn with powdered sugar and serve with the plum roast.
